Abstract
This is a French version. This case study examines the development of plant-based alternatives within the French cheese market. By analyzing various dimensions of the Marketing mix, the case highlights the challenges of introducing this emerging segment in a very mature market that is deeply intertwined with national culture. Furthermore, it offers insights into the need to balance between rational and irrational factors influencing consumer behavior as they consider adopting more responsible consumption practices in light of new alternatives.
